You will need:
1 cup chopped onion (I bought the pre chopped onion at Publix so I would not have to take time chopping!)
1 cup chopped Celery (also bought this pre chopped!)
1/2 cup of thinly chopped carrots (bought these already cut also in “matchstick” style and just cut them in half!)
1 rotisserie chicken (again no cooking!)
1 6oz can of evaporated milk
1 can of Cream of Chicken
1 32oz box of Chicken Cooking Stock (I recommend Kitchen Basics brand.)
2 cans of Pillsbury Buttermilk Biscuits (each can had 10 dumplings)
I recommend Kitchen Basics Chicken stock because it is literally half the sodium of the leading brand! For one whole cup you are only eating 24 calories, 0 fat, 150mg of sodium, and 4 grams of protein. While it costs almost a dollar more…I think it is worth it!
Anyways on to the directions!
Empty the chicken stock, can of evaporated milk, and can of cream of chicken to a boil. Add salt and pepper to taste. Once boiling bring to a simmer and add the vegtables. Then pull off all the chicken and cut into small bites/shreds and add to the pot. Finally cut the biscuits into quarters and lightly coat them in flour. Add them to the pot and keep simmering for about 6-8 minutes. Enjoy!
