Tequila Lime Bars….and a Giveaway!*

Hey kiddos! We have one hell of a party going on over here today, Tequila and a Giveaway! Speaking of tequila…did you see these beautiful Tequila Lime Bars? They are so heavenly, it was incredibly difficult to just eat part of one..but then I remembered Jillian Michael’s 30 Day Shred I still had to do and it was pretty easy to walk out of the kitchen. That woman is insane. I started her workout on Monday and when I go to climb the stairs I literally cry out loud. But anyways, enough of me whining about being a wimp, these bars are seriously scandalously delicious. And in case you forgot, not only do we have Tequila at this party, but we also have a giveaway! That’s right, KitchenAid has generously decided to hand over one of their beautiful 12 cup Food Processors to one of you! How excited are you right now? My guess is pretty damn excited!

That could be on your counter soon! You even get to pick the color! And now is the time where you say, Thank You Jessica! No, not me Jessica (you should still say it to me though), but Jessica from KitchenAid! In a funny little side story, Jessica and I met a while back at the SoBe Food Network Wine & Food Event and then “bumped” into each other on twitter a while later, which leads us to her generously offering to give one of these beauties to one of you! Now back to this Food Processor, not only does it have a 12 cup, but it also has a 10 and 4 cup work bowl as well! Which means you can mince a clove of garlic in the 4 cup, make pesto in the 10 cup, and finish with these Tequila Lime Bars in the 12 cup! This food processor really is impressive! Most do not come with multiple size bowls to work with! I really love that it comes with multiple sizes and has the extra wide feed tube to fit all fruits/veggies for slicing easily. Now whoever is lucky enough to win, can make these Tequila Lime Bars easily! With the 12 cup work bowl, these are extremely easy to put together…

A few words about these Tequila Lime Bars…First I changed the name. I kept calling them Tequila Lime Bars, when they are actually Tequila Bars…but I think Tequila Lime Bars fits better anyways. I also used Lime Tequila instead of regular tequila, and think it added that little extra something to them. I bought the mini bottles instead of large bottle because I am a Patron girl, and do not want a whole bottle of Margaritaville tequila taking up my Patron’s spot! If you do not want to buy the whole bottle, you will need 1 1/2 little bottles to complete this recipe. For two bottles, it cost me 2 dollars. Also I used true Key Limes and think they really were perfect in this recipe. If you are able to find them, spend the extra money and use them instead or regular limes! You will need double the amount of key limes, as in the recipe, since they are half the size. And lastly, even if you are not a Tequila fan (shame on you), you should give these a try. My husband hates tequila but thought these were delicious…and they really were!

Tequila Lime Bars

Ingredients:

1 12-ounce box vanilla wafers
1/2 cup pine nuts
3/4 cup unsalted butter (11/2 sticks), melted
1/3 cup Margarita Ville Island Lime tequila
1/2 cup fresh lime juice
5 large egg yolks, plus 2 egg whites
1 14-ounce can sweetened condensed milk
1 tablespoon sugar
Agave nectar for drizzling
zest of 2 limes

Directions:

Preheat the oven to 350. Pulse the wafers and pine nuts in a food processor until well ground up. Add the melted butter and blend until evenly mixed. Set aside 1/3 cup of crumbs; press the rest evenly into a 9-by-13 baking pan. Bake until golden brown, 15 to 18 minutes. Cool.

In a medium bowl, thoroughly whisk together the tequila, lime juice, egg yolks, lime zest and condensed milk.

In another medium bowl, beat the egg whites and sugar with an electric mixer until they hold soft peaks. Gently fold the egg whites into the tequila mixture. Spread the filling evenly over the crust and bake for 25 minutes; cool. Sprinkle the reserved crumbs on top. Chill in the fridge for 2 hours or overnight before cutting. Drizzle with agave nectar, if desired.

    I would use my food processor for making cilantro pesto, and sun-dried tomato pesto…two sauces that I’m itching to make from my garden. I’m waiting on my san marzano tomatoes to be fully ripe!

    I am now dreaming about a KA food processor, there are like trillion things I would use it for, one of them is an amazing chocolate cake which must be made entirely with food processor and because of that is now impossible for me to make… I would also use it for making soups – cause I’m a soup-lover, and sauces for sure too.

    I don’t have a favorite KA appliance because I’m 22 and just starting to build up my kitchen and have no proper appliances except for a beat up hand mixer (get it, beat up! it’s a mixer!) my mom gave me! And it is definitely on a shaky pedestal for favorite appliance.

    I think this food processor would be an awesome way to start my appliance collection. After these incredible looking Tequila Lime Bars (because only mean people hate lime bars), I would love to make peanut butter, pestos, bernaise and hollandaise (I’ve read that it’s quite easy to make these using a food processor and heated butter), julienne and pulverize everything…the options for me are endless!!

    Well, I don’t have it anymore (long story), but my favorite KA appliance was my Stand Mixer! It was by far the best appliance and certainly most coveted appliance I have ever owned. I miss it terribly and hope to get another one someday (soon)!

    There are definitely a lot of things I would use it for, but the one thing I would look forward to the most is using for homemade dressings. Right now I have a teeny tiny processor, which works, but it doesn’t have a feed tube to pour the oil in and really make a successful dressing!

    First of all, I’m making those bars…TONIGHT. They look heavenly.

    Secondly, my all time favorite Kitchenaid mixer is my 4.5 qt. Stand Mixer that my mom got when I was about 3 (I’m 24 now). It’s sturdy, it’s dirty, and I love it more than anything else in my kitchen. Sure, my slow setting and 1st gear setting are burnt out. It’s okay. I still heart it.

    If I were to get that food processor, I would make…everything. Since mine died, I can’t make pie crusts at home (tragic, I know). Plus, my cheesecakes are made in the processor. Then everything like chopped veggies for any number of things. Wow…I’d kind of forgotten how much I liked having a processor around lol.

    If I won the food processor, the first thing I would make is pastry. I don’t have a food processor right now, and I find that pastry is one of the things that I hesitate to make by hand. Nova Scotian blueberries are incredible, and the season is just coming up, so I might make a blueberry galette.     Annnnd #2… you never realize how useful food processors are until you use them. We have a great pasta Trapanese recipe that is one of our go-to summer dishes, involves simply processing a ‘pesto’ of sorts but with tomato, almonds, and basil. 15 minutes and boom, it’s done. Yum!

    Hate to give a repeat answer, but my KA mixer is the absolute best. The 6 quart bowl allows me to make a double batch of my grandmother’s schaum torte recipe in one fell swoop!

    As far as the food processor goes, it would be just perfect for whipping up batches of summer pesto to freeze!

    aaaaaaand in this lovely little food processor, I would make some sorrel pesto in one of the larger bowls and fake-y banana ice cream in the smallest one. Freeze some brown bananas (peel and chop them up before throwing them in the freezer for optimal non-frostbite handling) and add one banana, a tsp of almond butter, a tsp of cocoa powder, and a splash of milk for a super smooth frozen treat. And healthy. nom.

    My favorite kitchen aid piece is my stand mixer. I just love it. Last night I used it to make homemade whipped cream in a flash.     1) My favorite KA product is of course my Artisan Stand Mixer. I also have names for my mixer. Black Beauty and Pretty Pretty Princess are two of my faves.

    2) I would probably use the food processor to shred carrots for my carrot cake cupcakes or to make oreo crumbs for my cookies & cream frosting. LOVE that is has three bowls!

    There are so many things I would use this food processor for!!! For starters, I could use it to make baby food for my son. I have a teensy food processor now and it limits me to making a tiny amount at a time so this one would be awesome. I also have a great recipe for food processor pizza dough which would make pizza prep SO much faster than kneading by hand or making it in batches in the small machine I have now.

    My favorite appliance is definitely my Stand Mixer. I keep changing his/her name and gender. It’s metallic chrome so right now I’m calling him the Silver Surfer – but I think that’s because I have a surfboard/palm tree candle on the counter near it!

    As for how I’d use a new food processor – oh the possibilities, but I’m on a pizza dough kick so I’d want to try my hand at making doughs in a FP. I have a little guy that was a waste of money because I can’t use him that often :(

    Sadly, I do not own a Kitchen Aid product but I would LOVE to own a stand mixer. I’m one of those rare individuals that learned to whip meringue and whipped cream by hand. (And boy did my arms feel like jelly afterwards!!!!) I do own a hand mixer now, but it just isn’t the same. Kitchen Aid mixers are to me what sports cars are to most men lol.

    I would use the food processor for many jobs. I would make homemade baby food in the 4 cup size bowl. It is so much better and cheaper than the processed stuff in the store. I also would use it make my homemade cranberry relish. I also would use it for making applesauce and apple butter when it comes time for preserving. They had a special on steaks at my local Central Market last week so we fired up the grill, served them with Chimichurri sauce, and washed it all down with a bottle of Chilean malbec.     My favourite kitchen aid appliance would have to be my parents kitchen aid mixer. They got it right after they got married some 29 years ago, and that baby is still mixing. We’ve had some good times together. If I received this new fancy food processor, I would probably make some perfectly smooth humus.     My favorite kitchen aid product is my stand mixer given to me by my late grandmother. I use it for everything. It came with only the whisk attachment because she was convinced she would never use the paddle or dough hook and threw them out. It’s old and beige colored, but is still going strong! :)

    If I were to win this food processor, I would use it for EVERYTHING! When I stay with my dad, I use his food processor at least once a day. I’d make salsa packed with cilantro for my mom who adores cilantro, I’d make butternut squash soup (my fav!!), meatloaf, breadcrumbs, pie crusts, and more! :)

    If I were to win the food processor, I would make pesto from scratch. Then, for dessert, I’d make scones or fruit bars. I’ve always had to cut in butter into the flour by hand and I wonder if letting a machine do the work would make things taste better.

    If I won the Cuisinart food processor (what a wonderful thought) – I would make several things shortly thereafter:

    1. Homemade Nutella – I adore this stuff, but last time I tried to make it in my immersion blender mini processor, I broke it :(
    2. Indian food – from mint chutneys, to kneading naan and roti to eggplant and chickpea curry
    3. I also love Mediterranean breads, so I would make pita bread and then a whole line of accompaniments including homemade hummus, red pepper spread, babaganoush, tzatizki, etc.

    I can’t even count how many times I’ve read through countless food blogs looking for recipes, finding one that sounds absolutely amazing, and upon further reading of the recipe, find out that it requires a food processor. Que me woefully hitting the back button and begrudgingly finding another, do-able recipe.

    I couldn’t say what I would use it for first, there are so many, over at least 50 that I know of that I would have to choose from! So many pestos, so many emulsions, so many nut milks!

    My kitchen aid appliance is a blender and while it is certainly versatile and long (read that: very long) lasting, a processor would be such a bonus in the kitchen! I would use it for pesto, hummus, for salads and soups, in fact; it is a bit difficult to imagine a meal that would not employ this kitchen marvel in some way. This is the kind of appliance that would be cherished and cared for as part of the family because of the every day familiarity it would support.

    I use my kitchen aid stand mixer constantly. I would use the processor for so many dishes. It would be great for the bottoms of squares, or homemade toppings for ice cream. There is so much I would use it for…just can’t think of it all right now!

    My favorite KitchenAid product is my red hand mixer. It’s so cute and it was a gift from my fiance, which makes it rock even more.
    With the food processor, I’d probably make my own marinara pretty frequently. Living with a picky Italian man means we have to make all of our Italian food here, and a food processor would be a life saver!

    Dear Novice~
    I am seriously in love with this processor. Should you choose my entry, I will worship, pet, polish and use it at every opportunity. Trust me…this baby will purr.

    “1. Tell me which KitchenAid appliance you own is your favorite!”
    This is not an ode to the stand mixer, although I do have one, and yes, it is fabulous. I believe the unsung hero from the KitchenAid collection is the hand KHB300 immersion blender with the chopper, whisk and standard stick blender attachments. I have used this appliance to the point of abuse. I should apologize to it, really, as it has hit every hot batch of “Lo’s Famous Red Sauce” every year when tomatoes, basil and oregano are in season. I look forward to making gallons of this heavenly concoction every harvest season, knocking down fresh basil chiffonad and a variety of herbs grown in my garden into chunks of fire roasted tomatoes, garlic, onion, and carrot. Gently pressing the blend button once I have pinned large pieces of the vegetables against the bottom of the pot. Intermittently lifting back up to the top of the sauce, pressing down more large pieces, blending until I have reached the perfect texture without introducing air to the mix. Every other model would make the sauce orange instead of rich, gorgeous red I can achieve with my KitchenAid. My friends line up for red sauce every year. It is stuff of dreams – base to pizza, dipper for garlic rubbed toasted baguettes, marinara over decadent pasta dishes, a base for minestrone soup, the list goes on and on. Long past the season, I enjoy unfreezing red sauce to make beautiful, easy, healthy entrees all winter long. It is always as delicious as the day it was made.

    I’m not sure how long this partnership will last between the immersion blender and I. I should write poetry about this thing – some of which will be dirty.

    My response to “Tell me, if you were to win, what you would use your new food processor for!”

    As you may recall my tome to the immersion blender – my first charge would be to give that glorious tool a break. Once high summer season is upon us, vegetable chips come to mind – and I know I can get a more even result using the slicer than I can from a hand mandolin (and could save my poor hands the threat of more cuts from slip ups). Zucchini, carrot, sweet potato, parsnip – thin sliced, lightly fried in peanut oil – tossed with sea salt, and or mixtures of cayenne pepper, light brown sugar, cinnamon, curry, the list goes on.

    I should mention my fetish for white bean sage dip. A concoction of white kidney beans, added to translucently sweated white onion, garlic, and olive oil – mixed in the large bowl with aged Parmesan cheese, bunches of fresh sage, cracked black pepper, and thinned with a bit of chicken stock. Such a perfectly lovely appy or meal when offered with a variety of dippers. I could go on and on about the garbanzo bean, various types of hummus, nut butters, tart bottoms, perfect pizza doughs, pita doughs, tortilla bases, smooth vegetable cream soups, or properly blended and strained fruited wine coolers of all kinds (that have NOT been bastardized by Bartyle & James) but I won’t do that here.

    Suffice it to say – the processor would be in apt hands, treated well, and praised in a manner fitting to it’s many uses.

    My fave Kitchenaid appliance is definitley my true blue (blue willow…lol) stand mixer! I have so many of the attachments and use it almost daily! I use the grinder to make my hubby healthy breakfast sausage patties. I use the shredder to make easy work of shredded cheese. I also have made apple chips using the slicer. I have the ice cream maker and am still experimenting with it. And of course, I use the mixer for breads, cakes, frostings, etc.

    If I were to win, I would have so many uses for this food processor. First and foremeost would be to make our family recipe for Linzertorte for Christmas. It requires lots of chopped almonds. The dough is made in the food processor after using it to chop the nuts. I would try to make pastry doughs, pesto. I would probably be more likely to make things like slaws that require lots of chopping.

    My current food processor (the-brand-that-shall-not-be-named)is fine but is difficult to clean sometimes. I thought it would be my last food proc but the little contraption that keeps the spring in place and lets you lock it to the base broke ! So I do need a new one (am making do for now with some duct tape). Now that summer is here, I’d love to make gazpacho and pesto. Thanks!

    One thing I will DEFINITELY use the food processor for is getting my ingredients for the week ready on Sunday. I hate chopping so normally I prepare all my chopped ingredients on Sunday. It would be so much easier to do that with a food processor. Additionally I will use it to make pestos and hummus. All that fresh made food (especially dips like hummus) is soooo healthy for you!

    If i were to win this food processor the first thing I would try is a homemade pancake mix that I saw in my new America’s Test Kitchen cookbook. It requires mixing butter into the dry ingredients into a fine crumb. Last week I made a homemade pistachio cake, you should have seen me trying to get pistachios into a powder using by blender, it sure didn’t work very well. A food processor would have been much better!

    I would use my food processor in making all types of desserts! Sadly in our poor-man’s life, we don’t have a mixer/blender/anything at home, and since my Brazilian boyfriend has an enormous sweet tooth, I would use it to make a crust for a good old American apple pie. :)

    I love using my kitchenaid mixer, especially for making cinnamon swirl cake. I just throw the ingredients and leave it to mix for 10 minutes before popping it in the oven – tastes just like corner bakery and it’s super simple!

    If I had the food processor maybe I’d make quinoa veggie burgers, or gazpacho, or basically every sauce that takes me 10 bowls/cutting boards to make. What about using it to knead dough since I don’t have a stand mixer? these tequila lime bars? I’m driving myself mad just thinking of the possibilities. I have my mom’s old food processor from the 80′s which doesn’t even have a brand on it so no betrayal there, but for some reason its quite temperamental and only works when it is much cajoled and shimmied [ie thrown against the wall].

    My favorite KitchenAid product is my stand mixer. It’s a 6-quart PRO that I bought refurbished about 5 years ago. It’s gotten some heavy-duty usage since I bought it, and it still works (and looks) like it’s brand-new! I’ve made bread, cookies, cakes, you-name-it in that mixer! I’ve got the paddle, the whip, and the bread hook. It never leaves my kitchen counter!

    I would love a real food processor b/c what I have now is just a cheapy, 1 or 3 cup processor that has no real options. I use it to cut up meats for my toddler, he has GI condition (hirschsprung’s disease) and is a poor eater; not sure if it’s from his condition or just from being a toddler. Anyway, I try and hide chicken and other meats in his mac-n-cheese. also I made spreads w/ steak or chicken (kinda like chicken salad) in hopes that he’ll eat more. I also have some recipes that you use processed veggies and hide them in meals so that way toddlers get some veggies. I have tried it w/ my current processor, but I only tried it once b/c my processor is just too small and not powerful enough.

    I would love the kitchen aid 12 cup processor to help me get my lil guy back up on the weight charts!

    My would I love a kitchen aid Mixer. Unfortunately I live in NYC and just don’t have the kitchen space. I do so very much love my blender which makes A-Maz-Ing protein smoothies every morning.

    Question one: Which KitchenAid appliance you own is my favorite?

    I have a KitchenAid KSM5B 5-Quart Stand Mixer. Part of why I love this Mixer is because this was a hand-me-down from my Grandmother, who was an amazing cook and always trusted Kichen Aid products. When I make pound cakes, using my Mixer I am reminded of her and how we used to stand in the kitchen using the same Kitchen Aid Mixer. I use my Mixer for so many things. Like making homemade whipped cream for fruit topping or for coffee!

    Gosh, it would truly be a blessing! So many great things I could do. I don’t have a food processor so 1st of all having a processor to quickly chop would truly save me a lot of prep time for meals! I love making a Pesto Sauce, salsa, chopping nuts (for parfait), dry bread(for a crust) Ect.

    For #1 – definitely a stand mixer. Ours is white and we’ve used it for a lot of baking before our daughter was born. However, she has a severe milk protein allergy, so that limits the kinds of things we can make. But it’s still a useful appliance in our kitchen.

    For #2 – we’d look to make homemade hummus and pesto using a new food processor. We tried some store-bought hummus a few weeks ago and the kids loved it. However, I’d rather make it myself. The same with pesto. Since my daughter’s milk allergies rule out cream-based sauces for pasta, I’m looking to do more than the standard tomato-based ones.
