While most people are bundling up and wearing adorable boots for Fall…the rest of us down here in Florida are still knocking back lemonade…because its still 90 degrees! Can you believe that? It is almost Halloween…and I think I might actually sweat if I stand outside to hand out candy!
In celebration of the still warmer weather, some of my girlfriends and I headed out for a last minute warm weather picnic. We gorged ourselves on cheeses, fruits, israeli couscous and our favorite Spiked Raspberry Lemonade. Between the awesome company, warm weather and deliciously cold cocktails…we had a completely blast!
This Spiked Raspberry Lemonade is one of my all time favorite summer drinks. Not only is it fresh and cool, but I make it with my favorite Belvedere Vodka! Of course you can use whatever you like…but why would you have anything but the best?
Spiked Raspberry Lemonade
Yield: 8 large cocktails!
1 cup sugar
1 cup of water
¾ cup raspberries; pureed and pushed through a fine mesh sieve; plus more whole berries for garnish if desired
1 cup fresh lemon juice (about 6 large lemons)
4-6 cups cold water (this will vary depending on your taste)
8 oz Belvedere Vodka
Make a simple syrup by combining the sugar with 1 cup of water in a saucepan. Place over medium heat and heat until the sugar in completely dissolved; swirl the pan occasionally. Let cool.
Measure 3/4 of fresh raspberries and puree them in your blender or food processor. Push the raspberry puree through a fine mesh sieve to separate the seeds from the pulp.
Once the simple syrup has cooled, combine the raspberry puree, simple syrup and lemon juice in a large pitcher. Add 4-6 cups of cold water. The amount of water you use will depend on your taste, so add as little or as much as you want to achieve your perfect sweet/tart balance. And then lastly mix in the vodka and serve over ice!
