White Chocolate & Cranberry Blondies*

I am going to start this by saying that I am not a crier. I don’t cry at the drop of a hat or because I saw a sad movie. I will cry when I am really angry or frustrated. I will also cry when someone dies. But I do not cry at Twilight movies. Until yesterday.

Before you scorn me for being a Twilight watcher/reader, give me a break. I was still in high school when the first book came out (2005) and I had to see this through. Since Jorge moved me to Jacksonville, far away from my girlfriends, he is the one who must accompany me to see them now. So there we are, watching Taylor Lautner remove his clothes –my favorite part of every movie– and the girl next to me is squealing. And I think, oh this isn’t going to be good.

A little while later, an emotional scene comes along, and girlfriend next to me starts crying. Full on streams of tears running down her cheeks with a sniffle or two every few seconds. And that was all it took. Because of a new medication I am on, my lady bits have been all out of whack and my schedule has been thrown off. I have been running so high on hormones, that I could probably power our apartment for a week. So once she started, I knew there was no way I could stop it. Tears. Embarrassing, hot tears running into my popcorn.

I tried explaining to Jorge when we got out of the movie. It wasn’t my fault! It was the girl next to me! When she started, I couldn’t stop my own. It was out of my control. He just kind of looked at me and shook his head. Men, they just don’t get it. For the record, I didn’t sniffle once. I didn’t want the cute guy in front of me to know what a hormonal mess I am…I like to save that fun for my husband. :-)

So once we got home, there was only one way to make myself feel less ashamed. Bury my embarrassment in Blondies! And to make them a little more seasonal, lets add some cranberries and white chocolate. I knew from the trip to Nashville, that these blondies on The Little Kitchen were really delicious. I made them in the individual square cake pan to help myself with portion control. I am a big fan of the center pieces…so next time I would go back to the regular baking dish method, portion control be damned. ;-)

White Chocolate and Cranberry Blondies

Yield: 9 large blondies

Total Time: 40 minutes

Serve these blondies with a glass of milk and watch them disappear!

Ingredients:

3/4 cup plus 2 Tbsp packed light brown sugar
1 large egg
2 tsp vanilla extract
8 Tbsp (1 stick) unsalted butter, melted
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/8 tsp salt
3/4 cup white chocolate chips
1/2 cup dried cranberries

Directions:

Preheat oven to 325 degrees. Spray an 8x8 inch square baking dish with Baker's Joy.

In a small bowl, whisk together the flour, baking soda, and salt. Set aside.

In a stand mixer, beat together the brown sugar and egg, for about 2 minutes. Add vanilla extract and melted butter, beating until combined.

Add the dry mixture to the butter mixture, beating until just incorporated. Do not overmix.

Remove from stand mixer, and using a rubber spatula, stir in the white chocolate and cranberries.

Spoon the batter into the prepared baking dish. Using your fingers, or a spatula sprayed with a little Baker's Joy, press down the batter until flat/smooth. Bake for 25-28 minutes, or until until the top is dry and golden and a knife inserted in the center comes out with just a few crumbs attached (not wet, but not perfectly dry).

Remove the pan from the oven and place on a wire rack to cool. Cut the blondies into 2-inch squares. The blondies can be stored, well wrapped, at room temperature for up to 3 days (these seem to get better as they sit) or frozen for up to 2 months (thaw before serving).

I have never read or seen Twilight although I did see a picture of Taylor Lautner the other day and he seemed pretty hot so I think I approve of any movie where he gets naked.

I have some dried cranberries at home and these are just calling my name!

I’ll be seeing the movie tomorrow. I actually avoided all that stuff until I grabbed one of the books off the library shelf by mistake. I had to go back and read the first one after I was scolded by a friend for starting in the middle, then see the movies on DVD. Soooo, I’m looking forward to seeing Taylor on the big screen for the first time. I just might cry too.

Then I’ll need these blondies. Heck, I need the blondies even if I don’t cry. Or go to the movie. they look really, really good.

Wait until you have kids (if that’s in the plans)—then you’ll be a crier! I never used to be one either. Now? Well…let’s just say I always have kleenex on hand! These look awesome, btw!

My husband thinks it’s weird that I cry during overtures of musicals (I’m a Broadway geek). He however cried during Enchanted. I shall NEVER let him forget it!!! ;)

Blondies make everything better … these kinds of things though, just aren’t worth explaining to men!!

My Favourite part of a blondie/brown is the edge so this is the PERFECT solution for me.

Thanks for the great post :)

I am such a fool for blondies. Then you add white chocolate and cranberries. I’m sold. I’m glad you enjoyed the movie! Your husband is a trooper for going along!

Those blondies look good enough to bring a tear to my eye. You know what else brings a tear to my eye? The fact that you were still in high school when the first book came out. *sniff* You cute little knee-nipper-you.

Lol this post cracked me up! I’m not really a crier either, except when I’m angry or frustrated. But that’s only because there is so much emotion that I don’t know how to get out. I haven’t watched any of the Twilight movies except the first one; I need to catch up! And baking fixes everything (:

Ah, I know what you mean about the square pan – I love using it too for individual portions, but then you dont get any gooey center pieces! Such a dilemma…. and for Twilight, I dont scorn you, I havent seen it yet, but I plan to! I have no shame, haha!

I *might* be able to trump you. As I was going through Graceland for the 3rd time (VIP ticketholders can go through all day long if they want to and given how cattle-like the first 2x felt, the 3rd time we were completely alone)…I was in the trophy room where a concert was playing and he was singing Glory Glory Hallelujah and I burst into tears. Thankfully there were only 5 people in there at the time but I looked like THAT out of control Elvis fan that would probably try to lay on his grave and have to be dragged off by security.

The blondies look like they could dry a tear or two!

I’m not into Twilight and actually don’t understand it at all, but I am completely and totally a crier. I cry at like every movie and a lot of commercials. And that is without any sort of medication to speak of. :-) I’m so glad you mentioned the pan because I have to admit, when I looked at the first photo I was actually completely distracted by the shape of the blondies.

Found you through BakingBites.com and I felt those blondies calling my name. Hah, but I have to say, this recipe is second to your awesome story. I was cracking up in the few seconds it took me to get started. I start crying at the dumbest things sometimes and my husband just hugs me and says, “It’s ok” even though he has NO idea why I’m upset. Or even if I am upset. Which I’m not most of the time. I just need to get it out of my system. Glad to know I’m not the only one! :) Great post.
