Bacon & Sweet Corn Hash {Giveaway Closed}*

Bacon & Sweet Corn Hash and a Le Creuset Giveaway?! Could it get any better?

Sure, I could also be on a cruise right now out in the middle of the Caribbean with a Pina Colada in my hand.

Wait, I totally am! Thanks to my love for you guys, the awesome people over at Le Creuset, and the magic of scheduled posts…one of you are going to win a beautiful 5 1/2 Qt Round Le Creuset French Oven!

I will be sending all of you warm thoughts from the cruise! Please try not to hate me too much. :-)

Bacon & Sweet Corn Hash

Yield: serves 4 - 6

Hash may traditonally be made with potatoes, but I am firm believer that you can toss anything together and name it Hash. And this Bacon & Sweet Corn Hash is no exception! It is excellent for brunch or even as a side dish at dinner!

Ingredients:

2 1/2 cup corn kernels, about 4 ears of corn
6 slices cooked center cut bacon, chopped
1/3 cup grated parmesan cheese
1 large shallot, diced
3 green onions, diced
2 large garlic cloves, minced
2 large eggs, whisked
Creole Seasoning to taste (I use Slap Ya Mama)
2 tablespoons butter

Directions:

In a large bowl, toss together corn, bacon, cheese, shallot, green onion, and garlic. Add whisked egg and gently stir to combine.

Melt butter in a dutch oven, or a heavy bottomed skillet, over medium heat. Add corn mixture and sautee for 6-8 minutes, or until fragrant and corn is hot. Serve immediately!
