Chocolate Peanut Butter Pretzel Bites*

When it comes to decadent desserts that are easy, y’all know I am first in line. Last week I made the 4 ingredient Red Velvet Crinkle Cookies. Months ago I made the Raspberry Almond “Cheesecake” for Two and Jorge is still begging me to make it again! And just a couple weeks ago, I made the {Low Fat} Dr. Pepper Brownies (again made with just 4 ingredients)! I mean, hello, I obviously love easy desserts!

There are many bloggers who only use 100% homemade recipes, 100% of the time. And I am just not that girl…that’s some hard work, yo! Sure, sometimes I am the queen of complicated and will actually savor the process of making a decadent layered cake from scratch…but sometimes I just need a big bite of deliciousness in my mouth in 15 minutes. And I don’t think that’s too much to ask for!

The dream of divine desserts in under 15 minutes is totally reasonable and achievable with recipes like this. For these little darlings, you don’t even have to temper the chocolate -unless you are a glutton for punishment and just want to. I used the Original flavored pretzels from Pretzel Crisps® for a few reasons. First, they are adorable and I love how they are flattened -it makes for a better bite! But I also love the low calories & zero fat/transfat/satfat health benefits. I buy my Pretzel Crisps® in the deli section of Publix, but you can even pick up a bag on amazon if you are feeling extra lazy!

These Chocolate Peanut Butter Pretzel Bites don’t even have to be refrigerated and are perfect for the upcoming summer BBQs. …just whip up a batch and let your guests dive in!

Chocolate Peanut Butter Pretzel Bites

Yield: 24 Peanut Butter Bites

These babies are fast, easy and don't have to be refrigerated!

Ingredients:

1 cup creamy peanut butter
2 tablespoons butter, softened
1/2 cup brown sugar
1 1/2 cups powdered sugar
48 Pretzel Crisps® Original Pretzels
10 oz semi-sweet chocolate, chopped
fluer de sal, to taste

Directions:

In a stand mixer, combine peanut butter, butter, brown sugar, and powdered sugar -till well combined.

Roll peanut butter mixture in 1 inch balls and smash in-between two pretzels.

In a medium bowl, microwave semi-sweet chocolate in 15 second increments, until melted.

Line countertops with wax paper and dip half of pretzel sandwiches in melted chocolate and set on wax paper. Sprinkle with fluer de sal and let chocolate harden.

Serve immediately or store in an airtight container for up to 3 days.

    They look fabulous…and my go-to snack for the last 20 years has been Triscuits with a big smear of PB. Not that far off from the pretzel crackers you used. Sometimes I’ll put chocolate chips on top the PB. And I love what you just said about not making every.single.thing from scratch or making a big production out of everything. 100% agreed!!!

    Great minds think alike! The other night I was desperate for a snack and had a big bag of those pretzel crisps from Sam’s Club, and made sandwiches with peanut butter. Now if only I had some chocolate to dip them in ;-)

      You can find it at most nicer grocery stores…so down here in Florida I can find it at Publix, The Fresh Market, and Whole Foods. I can even usually find it at World Market.

    There is no way I could “smash” a one inch ball of dough between the pretzels, they are so thin and delicate that they just cracked :-(
    Added a bit more butter and peanut butter, then made dough patties which worked just fine between the pretzels.

      Regular sea salt will be fine too, however fluer de sal is a super flaky french sea salt. It’s great, but you can also use regular sea salt if you want!
