I’m a sucker for a good dip — wait, scratch that — I am a sucker for dip. I don’t care if it’s the french onion dip that you make with a packet of seasonings and carton of sour cream…or a dip that you slaved hours over and cost an arm and a leg to make. If there is dip, I will be seen shoving my face in it. I don’t even need chips, they just get in my way.

In spite of my proclaimed love for dips, you won’t find many on this blog. It’s not because I don’t make them…more like it’s the fact that I can’t control myself around them. If I am making a dip, it means one of two things: 1. I am making it to take to someone else’s house where I will be forced to share. 2. I am having company over…again, where I am forced to share.

This dip is one of my favorite kinds…dump everything in a bowl, mix and bake! It’s so easy and a wonderful make ahead appetizer. (If you want to make this one ahead, just prep it and store it in the fridge until you are ready to bake it.) By using some Alexia Crispy Seasoned Potato Puffs, you get the flavors of delicious baked potatoes without having to go through all the work yourself. Plus, they are perfectly seasoned already – so it saves you some effort!

If you love loaded potatoes, twice baked potatoes, potato skins, or any kind of hot dip — this one is for you! And really, who doesn’t love anything with potatoes?? 😉

Loaded Potato Puff Dip

Yield: serves 8

Recipe Note: The recipe below does not call for any salt on purpose! The Alexia Crispy Seasoned Potato Puffs have enough salt on them for the dip!


  • 1 (28 oz) bag Alexia Crispy Seasoned Potato Puffs
  • 3/4 cup sour cream (plus a dollop more for garnish)
  • 4 oz can diced green chilies
  • 4 strips cooked bacon, chopped
  • 3 green onions, minced
  • 8 oz sharp cheddar cheese, shredded and divided
  • freshly cracked black pepper, to taste


Bake Alexia Crispy Seasoned Potato Puffs according to directions.

Lower oven heat to 375°F and let puffs cool for 10 minutes. While puffs are cooling, grease a 9x9 baking dish - set aside.

In a large bowl, combine Crispy Seasoned Potato Puffs, sour cream, green chilies, bacon, green onions and half of the shredded cheddar cheese. The Potato Puffs will break down when mixing - that's ok!

Transfer Potato Puffs mixture to prepared baking dish. Top with remaining cheese. Bake for 20-25 minutes, until cheese is melted and bubbly.

Serve immediately with tortilla chips and an extra dollop of sour cream on top!
